Over 2 years ago, Samuel crafted this new product. That year, the harvest from one of our Vidal vineyard plots was low in sugar and high in acidity; almost green grapes! While some may see it as a problem, others see it as an opportunity. An initial tank fermentation, a second one in the bottle, and a bit of patience allow us to savor this well-crafted bubble. The nose reveals mineral and lemon notes. On the palate, the bubbles are delicate and invigorating with hints of herbs. The finish offers a slight bitterness and a refreshing salinity.
